
THE GOODS:
- 1 can of refried beans
- 2 avocados
- ¼ of a lemon – squeezed (optional)
- Salt and pepper – pinches
- ½ tomato
- ¼ red pepper
- 2 cups salsa
- ½ cup sour cream
- 1 cup of cheese (I use yellow and/or white cheddar)
- 5 green onion sprigs
- Tortilla chips (a spoon works to! 😛 or anything with a crunch: crackers, peppers, cucumber, celery, etc)
LAYER 1: beans
Remove beans from can and mash onto the bottom of a baking dish to form a smooth even layer
LAYER 2: avocado
In a bowl, mash avocado, lemon, salt and pepper until smooth. Layer this on top of the beans
LAYER 3: tomato and red pepper
Dice tomato and red pepper into small cubes
LAYER 4: salsa
Spread salsa to make an even layer on top of the other ingredients
LAYER 5: sour cream
Spread sour cream to make an even layer on top of the salsa (this takes some finessing, be patient. I feel you)
LAYER 6: cheese
Sprinkle cheese evenly
LAYER 7: green onion
ENJOY! Dip your favorite chips into the layered goodness
Sprinkle green onion evenly
Play around with the ratios of all the layers for yourself! If you want more salsa, go for it! Add more salsa next time. It is totally customizable 🙂
This recipe fills a 10 inch by 6 inch baking dash and serves about 6 people. Michael and I will munch on it over 3 days. Its great to have around on busy days since it’s a quick, easy and filling snack!
For a vegan option:
- sub for vegan cheese
- skip the sour cream! I have made this dish a few times without having sour cream on hand and its honestly just as good!
**If you don’t have refried beans on hand, but you have beans in general you can heat the beans on low with water for 15 minutes and then mash them with a fork till smooth. Wait for it to cool before putting it into the assembly line!
